Spring green broth

A beautiful seasonal dish, packed full of goodness and flavour. Everything in the soup is growing right now, so don’t wait to make this recipe! It’s a spring green and purple sprouting broccoli soup with orzo. The key to this dish is the spring onions in lemon juice, they add the perfect little burst of flavour when you’re least expecting it! The wild garlic pesto is also just a lovely addition.
Ingredients
3 tablespoons olive oil
1 onion
1.5L chicken stock (or vegetable it’s up to you!)
150 orzo pasta
8 purple sprouting broccoli spears
200g spring greens
2 spring onion
1 lemon, juiced
1 tbsp wild garlic pesto per serving
Method
1. Gently fry the onions at a low heat for 3 or so minutes stirring often.
2. Pour the broth over the onions and add the orzo (set a timer per packed cooking instructions)
3. Cut the broccoli stems in half and add to the soup along with the finely shredded spring greens when there’s 3 minutes left on the timer
4. Remove from the heat and set to one side
5. Finely slice the spring onion and mix with the juice of the lemon
6. Serve the soup with a drizzle of wild garlic pesto and chopped spring onions.
