Pickled red onions

Would highly recommend having these in your fridge. They make a great addition to salads and burgers... to be quite honest, they go well with everything! They jazz up any meal from sandwich to pies!

Ingredients

1 thinly sliced large red onion (or 3 small)
300 ml Apple cider vinegar
3 tbsp granulated sugar
1 tbsp salt
6 pepper corns
6 coriander seeds

Method

1. Put a clean jar in the oven for around 15 minutes at 180c
2. Meanwhile pour the vinegar, sugar, salt, pepper corns and seeds into a pan and bring to a simmer. After a minute or so, check the sugar and salt have dissolved and take off the heat
3. Boil the kettle and pour boiling water over the onions in a sieve or colander.
4. Once cooled put in a sterilised jar and pour the vinegar over the onions - topping off with more vinegar if not completely covered
