Beetroot and goat's cheese croustades

A nice simply recipe that quick to whip up and can also be prepped ahead of time. Croustades always look really fancy and are simple to prepare. For this recipe I have used precooked beetroot but you can just as easily cook the beetroot yourself.

Ingredients

1 small pre-cooked beetroot
2 tbsp goats cheese
2 tbsp double cream
A handful of chives
15 croustades

Method

Cut the beetroot into small cubes and roughly chop your chives.
Put the goats cheese, double-cream and chives into a blender and mix until bright green
Put the whipped goats cheese into a bowl and season with salt and pepper.
Spoon a small teaspoon of goats cheese into a croustade, then place a few bits of goats cheese and top with some chives.
